Before you start
Centralize saves your edits through your own Salesforce connection, so you can only change what you're allowed to change in Salesforce.
If you haven't connected your own Salesforce account, Centralize uses your team's admin connection, unless your admin has turned that off. In that case, connect your Salesforce account from Integrations.
Edit an opportunity field
Open the opportunity.
In the header, hover over Stage, Amount, Close date, or a custom field.
Click the pencil icon.

Enter the new value and save.
You can also change an opportunity's stage right from the opportunities table.
Fields you can't edit show a lock icon instead of a pencil.
When Salesforce blocks a change
Your Salesforce admin may have validation rules — for example, requiring a field before an opportunity can move to a certain stage. If a change breaks one of those rules, or you don't have permission to make it, Centralize shows the error message from Salesforce. If Salesforce names the fields causing the problem, those are listed too.
When this happens, nothing changes in Salesforce or Centralize. Fix the issue the message describes, or ask your Salesforce admin, then try again.
Limitations
Editing needs a Salesforce connection, so it's available on the Enterprise plan.
If there's no Salesforce connection you can use, you won't see the pencil. Hovering shows a prompt to connect Salesforce instead.
Users with read-only access can't edit opportunity fields.
